













| 2 Balls of Mozzarella (weighing 125g) |
| Salt and freshly Ground Black Pepper |
| 4-5 Rashers of Dry Cured Back Bacon |
| Olive Oil |



Pat dry the cheese with kitchen paper and season, wrap the cheese with as much bacon as necessary to cover.
Heat a little oil in a frying pan and add the mozzarella parcels; leaving for 1 minute before turning. After 3-4 minutes they should be nicely crisp all over.
Serve with Rocket salad, crusty bread and the pan juices.
