







| 4 Pork Loin Steaks |
| 1 tbsp Olive Oil |
| Salt and Pepper |
| 2 Ripe Mangoes (peeled, stoned and cubed) |
| 1 small Red Onion (peeled and chopped) |
| 1 large Lime (juiced) |
| 40g Fresh Coriander (roughly chopped) |



Heat the oil in a frying pan, season the steaks and place in the pan. Cook the Pork Loin Steaks, without touching, for 5 minutes then turn and cook for another 4 minutes.
Remove the steaks and rest, somewhere warm, for 4-5 minutes.
Combine the mangoes, onion, lime juice and coriander in a small bowl, season and serve with the Pork Loin Steaks.
Serve with baby baked potatoes and salad.
