Pork Loin Steaks with Mango Salsa


Serves 4

4 Pork Loin Steaks
1 tbsp Olive Oil
Salt and Pepper
2 Ripe Mangoes (peeled, stoned and cubed)
1 small Red Onion (peeled and chopped)
1 large Lime (juiced)
40g Fresh Coriander (roughly chopped)

Heat the oil in a frying pan, season the steaks and place in the pan. Cook the Pork Loin Steaks, without touching, for 5 minutes then turn and cook for another 4 minutes.

Remove the steaks and rest, somewhere warm, for 4-5 minutes.

Combine the mangoes, onion, lime juice and coriander in a small bowl, season and serve with the Pork Loin Steaks.

Serve with baby baked potatoes and salad.
