







| 4 Salmon Steaks |
| Salt and Pepper |
| 1 tbsp Clear Honey |
| 1 tbsp Mint (freshly chopped) |
| Juice of 1 lime |
| 1 large handful Rocket Leaves |
| A little Olive Oil |
| 50g/2oz Parmesan Cheese (grated) |
| 1 tbsp Pine Kernels |
| 3 Garlic Cloves |



In a shallow dish, combine the seasoning, honey, mint and the juice of half a lime, add the salmon and marinade for 10 to 15 minutes.
Pre-heat the grill to high and lift the salmon from the marinade and grill for approximately 5 to 8 minutes depending on the thickness of the steaks. Brush the salmon occasionally with the marinade whilst under the grill.
To make the pesto, put all the remaining ingredients into a food processor and blend into a paste.
Serve with the rocket pesto and new potatoes.
