













| 2 Lemon Sole Fillets |
| 50g Butter |
| Sea Salt and Black Pepper |
| 125ml Marsala Wine |
| Parsley Butter |



Preheat the oven to 190ºC/375ºF/Gas 5.
Arrange the Lemon Sole Fillets in a well-buttered oven-proof casserole dish. Sprinkle the Fish with salt and pepper; pour marsala over it and dot with the remaining butter. Cover and cook in the preheated oven for 20 minutes.
Serve topped with pats of parsley butter.
Alternatives:
Wild Haddock Fillets or Wild Saithe Fillets (Lieu Noir)
Serve with rice timbales.
