Today, the Prunier Manufacture continues their traditional heritage by producing its caviar in a completely controlled environment, on several acres of unspoiled land along the Dordogne River near Bordeaux .

To achieve the fine results that characterise ‘perfect’ caviar, Prunier Manufacture has adopted an elaborate production process, which naturally starts with selecting the perfect species of fish.

The Siberian sturgeon, Acipenser baerii, is one of the most beautiful sturgeons. Like its Caspian Sea cousins, it can grow up to three meters in length and can weigh up to several hundred kilos. Baerii sturgeon develops particularly well in captivity and produces caviar after eight years of growth.

Harvested from young Acipenser baerii sturgeon, this caviar has a delicate texture and a small, dark grain. Its structure is lightly salted, yet complex, and is the perfect opportunity for you to discover the world of Prunier caviar.

Refrigerated Shelf life: Best before date on tin. Once opened, reseal the tin and keep refrigerated and use within 72 hours.

We recommend serving caviar as a luxury canapé or starter. Because of its delicate texture and flavour, a little goes a long way!

Spoon a pea-sized amount onto miniature blinis which have been topped with sour cream.

It is also delicious as a luxury accent on Smoked Salmon Royale Fillets, served with a twist of lemon and elegantly snipped chives.

Traditionally, caviar is enjoyed with ice-cold vodka, and is eaten with a bone spoon.
