This clever roast combines all the tenderness of succulent pork loin with an extra boost of flavour from its natural bone trivet. The good covering of fat on the outside crisps up beautifully, and helps this roast taste quite so delicious! Our butchers have skilfully carved the meat from the bone and tied it back on, to make presentation at the table an absolute snip.

Cooking Guidelines:

Remove all packaging and pat dry with kitchen paper

Allow 30-60 minutes for the meat to come to room temperature

Temperatures & Times:
Pre-heat oven to 250ºC/Fan 230ºC/Gas 9
Place the joint in a roasting tray, season salt and pepper
Sear meat for 15 minutes in the oven
Reduce oven temperature to 180ºC/Fan 160ºC/Gas 4 and cook for 55-65 minutes
Internal temperature of meat: 72-75ºC

Remove from the oven and rest for at least 20 minutes in a warm place

Easy Carving:
After resting, snip the strings, lift the meat off the bone.
Slice and serve on hot plates.

The pork was good but spoilt because the fat had been removed from the rind. Was so disappointed thecrackling did not crackle at all. I have never had a joint of pork the did not produce crackling before. It is the best bit. Really lovely taste and easy to carve
Although a lovely piece of pork, the guidance cooking time was a little short, leaving the meat a little underdone to our taste.
