Slice Kidneys in half lengthways, remove the white ducts with kitchen scissors and pan-fry in a little butter flat-side down for 7 to 8 minutes, turning them when they are half done.
Place on a piece of dry toast, season and insert a little butter in each Kidney.
Pour the gravy from the pan over them and serve very hot.
Serve with onion and tomato salad.
