All our shins are cut from superior hind meat from top quality, traditionally reared beef. Beef shin becomes incredibly tender after being braised for two or three hours, yet still holds its shape, so can be carved into slices. And you can also scoop out the marrow to mix in with the gravy, or keep on one side to spread on to toast.
