This is the best-selling sea fish in France, because it's so tasty and versatile. Similar to cod in appearance, but darker in colour, it has a meaty texture and hearty flavour that's a little like crayfish. Also known as Lieu Noir, it's great for soup and fish pies, and delicious poached in milk and served with a traditional parsley sauce.
