It's currently very fashionable on the menus of top restaurants where it is used in small quantities to create innovative, contemporary dishes. The traditional way to enjoy tongue is to simmer gently for several hours, and serve hot with caper sauce and mash. It's also very tasty served warm or cold in salads and sandwiches.
