Ox Liver and Ratatouille

Heat the olive oil in a pan and sauté the onions and garlic

Ingredients

480g Ox Liver
2-3tbsp Olive Oil
160g Onions, diced
2 cloves of Garlic
70g Green Peppers, diced
140g Aubergines, cubed
140g Courgettes, sliced then quartered
400g tin of Chopped Tomatoes, including juice
1 sprig of Thyme
Salt and Pepper

Ox Liver and Ratatouille

Instructions

Heat the olive oil in a pan and saute the onions and garlic. Add the liver and turn until browned all over. Then add the peppers, then the aubergines, then the courgettes and finally pour in the tomatoes and add the thyme. Season to taste. Cook gently until the liver is thoroughly cooked and the vegetables have absorbed the tomato juice.

Serve with either mashed potato or boiled rice.
