Heat the olive oil in a pan and saute the onions and garlic. Add the liver and turn until browned all over. Then add the peppers, then the aubergines, then the courgettes and finally pour in the tomatoes and add the thyme. Season to taste. Cook gently until the liver is thoroughly cooked and the vegetables have absorbed the tomato juice.
Serve with either mashed potato or boiled rice.
