Pork (80%), Water, Rusk (Fortified WHEATFLOUR (with added Calcium Carbonate, Iron, Niacin, Thiamin), Salt), Seasonings (Salt, Fortified WHEATFLOUR (with added Calcium Carbonate, Iron, Niacin, Thiamin), Dextrose, Preservative: Sodium SULPHITE, Ground Spices, Flavourings, Antioxidant: Sodium ascorbate). Filled into natural pork casings.

Beef Rump Mini Roast

Low Temperature Cooking: Pre-heat oven and baking tray to 80°C without the fan. Pat dry with kitchen paper. Heat a frying pan on high. Add a little oil to the pan, or brush directly onto the meat. Sear the meat all over for 4-5 minutes in total. Place on the pre-heated tray and season with salt & pepper. Set the thermometer to 60°c and insert horizontally into the centre of the meat. Put into the oven until the thermometer alarm sounds (approx 1 -1«hrs). Just before serving brush with a thin layer of dijon mustard & roll in finely chopped fresh soft herbs of your choice. Choose a milder herb like flat leaf parsley, chives, basil, chervil.

Pan to Oven Roasting: Pre-heat a conventional oven to 230°C/450°F/Gas 8. First sear in a pan on all sides for 6-8 minutes, then roast in the oven at 230°C.

Rare: 10 minutes
Medium/Rare: 12 minutes
Medium: 15 minutes
Well Done: 18-20 minutes

Take care not to overcook or the resulting fillet will be dry & tough. Then rest for at least 10 minutes before carving.

Lamb Short Saddle

Remove from its packaging, allow the meat to come to room temperature for 20 minutes, patting dry with kitchen paper. Preheat oven to 230°C / 445°F / Gas 8 and a frying or griddle pan. Once hot, add a little oil to the pan. Sear the meat for 4-5 minutes. Place your meat uncovered on a rack in a roasting tin, and put into the preheated oven. Cook to your liking following the recommended times.

Medium: 15 minutes
Well Done: 18-20 minutes

Remove from the pan, cover with foil and leave to rest in a warm place for 10 minutes.

Pork Loin Mini Roast

Remove the meat from its packaging, allow the meat to come to room temperature for 20 minutes, patting dry with kitchen paper. Preheat oven to 230°C / 445°F / Gas 8 and a frying or griddle pan. Once hot, add a little oil to the pan. Sear the meat for 8-10 minutes. Place your meat uncovered on a rack in a roasting tin, and put into the preheated oven. Cook the meat to well done for 16-18 minutes. Remove from the oven, cover with foil and leave to rest in a warm place for 10 minutes.

Minced Steak

Allow the mince to come to room temperature prior to cooking. Remove all packaging. Preheat a wide, heavy bottomed pan over a high heat and add 5ml (1 tsp.) of oil. Add minced steak and brown all over for 6 - 9 minutes per 440g. Then use as per your favourite recipe. Ensure the minced steak is piping hot throughout before serving.
CHEF's TIP: For best results, use a wide heavy bottomed pan to allow the minced steak to spread out and brown in a thin layer. Break up the minced steak with a wooden spoon before or during cooking to release the meaty flavour!

Pork Sausages

Remove all packaging. Separate the sausages using scissors. Do not prick sausages.
Combination of par-boiling and frying, BBQ or grilling: Add the sausages to simmering water for:

From Defrosted: 10 minutes
From Frozen: 20 minutes.

Drain, pat dry, brush all over with oil and fry, bbq or grill for 5-8 minutes.

Alternatively:
Pan Fry:Heat a little oil in a frying pan. Cook on a medium heat 18-20 minutes from defrosted. Turning occasionally.
BBQ: 18-20 minutes from defrosted. Turn regularly to avoid charring.
Grill: Pre-heat grill to medium. Place sausages on grill rack for 14-18 minutes from defrosted. Turn occasionally.
