They carve just like our larger roasts, but need less time in the oven. Like all roasts, leave them to rest for ten to fifteen minutes after cooking for maximum tenderness and taste.

Pork Loin Mini Roast

Low Temperature Cooking: Pre-heat oven and baking tray to 80°C without the fan. Pat dry with kitchen paper. Heat a frying pan on high. Add a little oil to the pan, or brush directly onto the meat. Sear the meat all over for 4-5 minutes in total. Place on the pre-heated tray and season with salt & pepper. Set the thermometer to 60°c and insert horizontally into the centre of the meat. Put into the oven until the thermometer alarm sounds (approx 1 -1½hrs). Just before serving brush with a thin layer of dijon mustard & roll in finely chopped fresh soft herbs of your choice. Choose a milder herb like flat leaf parsley, chives, basil, chervil.

Lamb Short Saddle

Remove from its packaging, allow the meat to come to room temperature for 20 minutes, patting dry with kitchen paper. Preheat oven to 230°C / 445°F / Gas 8 and a frying or griddle pan. Once hot, add a little oil to the pan. Sear the meat for 4-5 minutes. Place your meat uncovered on a rack in a roasting tin, and put into the preheated oven. Cook to your liking following the recommended times.

Medium: 15 minutes
Well Done: 18-20 minutes

Remove from the pan, cover with foil and leave to rest in a warm place for 10 minutes.
Pan to Oven Roasting: Pre-heat a conventional oven to 230°C/450°F/Gas 8. First sear in a pan on all sides for 6-8 minutes, then roast in the oven at 230°C.

Rare: 10 minutes
Medium/Rare: 12 minutes
Medium: 15 minutes
Well Done: 18-20 minutes

Take care not to overcook or the resulting fillet will be dry & tough. Then rest for at least 10 minutes before carving.

Not tried mini roasts yet.The mince is wonderful for shepherds pie and for pasta sauce mini use fat no lumpy rubbery texture ,soft and pleasant to eat that goes for the Burgas I can't sing their praise enough.
Have yet to try toad in the hole but had the chicken yesterday ang it was really good...

perfect for 2 people - a minor quibble is there is not enough fat attached to the pork skin to make good crackling as it has been removed and then strung back on. A bit of fat on the beef for cooking would also be good as those who don't want it could discard it.

I think this is the fourth time I have ordered this product. The joints are just the right size for a hungry couple of pensioners.

Beef mini roast was tough and chewy that is why I have only rated it one star.

The pork mini roast was very good and up to the standard I expect from Donald Russell. Would rate this 4 Stars.

Mini Roasts are ideal for a small family of 3 as there is never any waste and shorter cooking times make them very economical.
Excellent Quality Meat and shock freezing them keeps in all of the goodness.
