Inspired by the popularity of our range of Mini Roasts, we felt it high time to introduce just such a smaller, easy to carve roast into our range of lamb leg joints. This easy to cook and carve roasting joint provides the same rich, sweet lamb flavour as a full leg joint, without all the leftovers.

Since this is a small, compact joint, care should be taken not to overcook the meat. There are two simple cooking methods we recommend, to give you a beautifully tender, succulent roast.

1. Thawing
Allow plenty of time for defrosting. Always leave in wrapping and thaw out slowly in your refrigerator. Ensure product is thoroughly defrosted before cooking.

2. Bring to Room Temperature
Carefully remove the meat from the packaging and pat dry with kitchen paper. Allow 10 - 15 minutes to bring to room temperature, so the meat will cook more evenly and remain juicy.

3. Cooking temperatures and times(see table below)
Follow the simple guidelines below. Take care not to overcook the meat as this will make it dry and tough.

Pan to Oven Searing time per side Then roast in the oven at 230ºC Resting time Approx total cooking time

  25 - 27 mins 75 - 90 mins (no need to rest) 80 - 100 mins

4. Resting
Once the joint is cooked to your liking, leave in a warm place to rest. This allows your product to relax and become moist and tender all the way through.

5. Serving
Carve thickly across the grain into neat circular slices 1cm or more thick, to enjoy this roast at its best. Season to taste with salt and pepper and serve with caramelised root vegetables and garlicky mashed potatoes.
