How to cook to perfection

1. Prepare the meat

• Defrost overnight (or for at least 12 hours) in a refrigerator.
• Before cooking remove all packaging. Pat dry with kitchen paper and allow the birds to come to room temperature for 20-30 minutes.

2. Preheat the oven

• Preheat the oven use the table below.
• Place the birds into an ovenproof dish, and dot with soft butter all over. Pour 2 tbsp cold water per bird into the bottom of the roasting tray.

3. Cooking Guidelines

• Place the dish in the centre of the oven and cook using the table below.
• Baste every 10-15 minutes with the cooking juices. Game birds can dry out during cooking. If you wish, when you baste the bird during cooking use a little extra butter to help keep the meat even more moist.once to avoid letting out precious juices and drying out the meat.
• To ensure the birds do not overcook and dry out check 10 minutes before the end of the cooking time by testing through the width of the bird with a skewer to check if the birds are cooked and to ensure the juices are clear.
•Alternatively, cook using a meat thermometer which should be set at 75°C..

4. Recommended Roasting Times

Please note times stated in our guidelines relate to conventional ovens. If you have a fan oven and are unable to turn the fan off, we advise reducing the suggested temperature by 15-25°C.

5. Rest your roast

• Remove from the oven and leave to rest covered with foil for up to 15 minutes.
• To serve carefully remove all of the strings and carve crosswise so each slice contains stuffing.
