Frozen at the peak of perfection
-18°C. Once defrosted store between 0 - 5°C. Use within 24 hours
Remove all packaging and pat dry with kitchen paper. Allow 30 minutes for the meat to come to room temperature. Preheat oven to 250°C / Fan 230°C / Gas 9. Place the joint in a roasting tray. Season with salt and pepper. Sear meat for 15 minutes in the oven. Reduce oven temperature to 180°C / Fan 160°C / Gas 4 and continue to cook for the time below:
20-22 minutes for medium (Internal temperature of meat: 52°C)

27-30 minutes for well done (Internal temperature of meat: 56°C)
Once your joint is cooked to your liking, remove from oven. Place it on a board or platter, cover with foil and leave to rest for at least 20-25 minutes. After resting, slice and serve on warm plates.

Lamb excellent. Stuffing inspired several new dishes!
Ok, but prefer to cook your raw saddles - tried these for convenience.
Very tasty and easy to cook and serve
Cooked it when I had guests for dinner party and they like us raved about the lamb - so good and tender.
A lovely idea and the lamb was tender.
However I wouldnt buy again as although lamb was full of flavour it was dwarfed by a large amount of fat wrapping it and pieces of sinews through the middle. Although the joint looked a good size in fact there wasn't that much lamb for the price so a No, not...
