Remove the Lamb Liver Strips from the packet and pat dry with kitchen paper. In a large frying pan, heat the oil and butter over a high heat, add the liver and fry for 1 minute.
Reduce the heat to medium, add the shallot, carrot, courgette and celery and cook for a further 1-2 minutes occasionally turning the liver.
Season with salt and pepper to taste, sprinkle with chopped parsley and arrange on preheated plates.
Serve with crisp potato rösti.
