A superb slow-cook cut, Lamb Fore Shanks are cut from the lower part of the front leg and are much smaller than the traditional Lamb Shank. When slowly, gently braised, our Lamb Fore Shanks will deliver rich, tasty, fall-off-the-bone tender meat. We recommend serving two per person, although one makes an ideal meal for smaller appetites or kids.
Head Chef's Tip:
Their neat size lets you pop them straight into the pot whole, where they will retain their shape and take added flavour from the bone. Try braising them with red wine, garlic and rosemary, and serve with seasonal vegetables and of course lots of the rich, thick gravy!

Once defrosted - Store between 0 - 5ºC - Use within 24 hours
About 30 minutes before cooking, remove the defrosted meat from its packaging and pat dry with kitchen paper. Allow the meat to react room temperature.

Pre-heat the oven to 140ºC/275-325ºF/Gas 1-3. Heat a large ovenproof pan on a high heat, add a little oil and sear the meat until nicely browned all over.

Then take out the meat and Sear any vegatable in this pan, add stock/wine and place the meat back in the pan, ensuring the liquid covers atleast a 1/3 to 1/2 of the meat and bring gently to the boil on the hob. Cover with a lid and transfer into the preheated oven, or continue to simmer gently on the hob at a very low temperature.

Check from time to time and top up liquid if needed. Cooking times vary depending on the cut and your oven but as a rule, try to check casseroles after an hour and regular intervals after. The easiest way to check joints is to use a meat folk, inserting it into thickest part.

The two we have tried were practically inedible because they were mainly full of gristle and the little bit of meat was tough we have already sent you a email about this and still waiting for a reply the ones we have had before have been great that's why we bought some more Thanks for your comment.

Sadly this product was not up to its usual standard and made a very disappointing meal. I have already made Donald Russell aware of my concerns and have received excellent customer service Thanks for your comment.

I bought 30 lamb shanks, and some of them were very tough, despite being cooked for 3 hours. Some were all right, but others were defnitely tough. I am always very satisfied with the meat you send, particularly the steak! Thanks for your comment.

It has always been my experience that the meat on lamb shanks fell off the bone after slow cooking. Rather the opposite and very fatty. More so than usual.

I have ordered the lamb shanks before and found them very good. However the first pack in my recent order was tough and sinewy - more ancient mutton than lamb. I am reluctant to spend time cooking the other packs in case they are as unpleasant.

Tasty and up to the usual excellent standard. Everything you order comes expertly packed in a large polystyrene box in dry ice.

Put these in the slow cooker with some veg and you have a tasty wholesome meal without any effort! The meat just melts off the bones.

I'm am usually full of praise for Donald Russell products but my last order was a let down. The lamb fore shanks were not at all well trimmed like they usually are. I thought they'd make do and perhaps more fat more flavour but unfortunately this did not carry through. They were surprisingly tasteless... Read More. Thanks for your comment.
