The Lamb Crown is composed of two racks, skilfully tied into a circle to resemble a Royal Crown. A roll of fat that's been trimmed from the racks is tucked inside the Lamb Crown whilst it roasts. This keeps it really juicy, and imparts even more delicious sweet flavour to it.

Store below -18ºC. Defrost in refrigerator for up to 36 hours.

Once defrosted store below 5ºC and use within 24 hours.

Remove all packaging and pat dry with kitchen paper.

Allow 30 minutes for the meat to come to room temperature.

Cooking Temperatures and Times:

Preheat oven to 220ºC / Fan 210ºC / Gas 8.

Place the joint in a roasting tray.

Season with salt and pepper and cook to your liking.

Cook in the centre of the oven for:

30-40 minutes for Medium: Internal Temperature of Meat: 55-60ºC

40-45 minutes for Well Done: Internal Temperature of Meat: 65-70ºC

Remove the coil of fat from the centre of the of the crown 5-10 minutes before the end of the cooking time.

PLEASE NOTE: The coil of fat in the centre of the crown maintains the shape of the roast during cooking and helps the meat stay juicy. To serve, fill the cavity with roasted vegetables.


Once your joint is cooked to your liking, remove from the oven.

Place it on a board or platter, cover with foil and leave to rest in a warm place for at least 20 minutes. After resting, cut the strings that keep the meat in place.

Carve into cutlets by slicing between the bones, arranging on a serving dish or warm plates.
