Allow the defrosted meat to come to room temperature before cooking.
Pat dry with kitchen paper. Preheat a griddle or frying pan to the highest setting and brush the steaks with oil all over.
Place the steaks into the pan and cook for:

Medium 2 minutes per side
Well done 2½ minutes per side
Turning the steaks only once.

Remove the steaks from the pan and place on a rack.
Cover loosely with foil and leave to rest for 10 minutes before serving.

Chefs Tip:

Sear along with a whole clove of garlic and a couple of thyme sprigs to infuse flavours during cooking.

Quite a bit of fat and frankly the chops were not at all tender. Perhaps I should have slow cooked them, rather than fry them in order to eat them pink. Thanks for your comment. A wee bitty fatty but very tasty
Delicious and easy to cook following the directions.
Lamb Chump steaks are fantastic taste and value. Very easy to cook.

As with the Barnsley chops I tend to slow cook them in a casserole to suit my elderly aunt’s ability to eat them
