A very popular cut in restaurants, Lamb Chump has recently been ‘rediscovered’ by Britain’s foodies. The equivalent of rump in beef, it has a satisfying bite and an edge of tasty fat. Braise or flash-fry, finishing in the oven for the best results.

Allow the defrosted meat to come to room temperature before cooking.
Pat dry with kitchen paper. Preheat a griddle or frying pan to the highest setting and brush the steaks with oil all over.
Place the steaks into the pan and cook for:

Medium 2 minutes per side
Well done 2½ minutes per side
Turning the steaks only once.

Remove the steaks from the pan and place on a rack.
Cover loosely with foil and leave to rest for 10 minutes before serving.

Chefs Tip:

Sear along with a whole clove of garlic and a couple of thyme sprigs to infuse flavours during cooking.
