Place all the ingredients, except the Lamb, in a food processor and combine until thoroughly mixed.
Press the mixture on top of each Loin and place on a baking tray. You may now refrigerate the Loins until required if necessary, if you do remember to bring them to room temperature before cooking. Preheat the oven to its highest setting and cook the Loins for 12-15 minutes or until done to your liking.
Serve with Tagliatelle and roasted Vine Tomatoes.
