Stefan Kolsch, Head Chef at Donald Russell, heads up our team of food experts, and supervises our regular tastings of all our products to make sure the quality is as good as ever. He also travels the world to find interesting new products, and creates new recipes for all our existing ones.

Q&A - Easy BBQ

Q. "I  am planning a BBQ for my husband's 50th in June. All the family will be attending and as I have used your recipes in the past with much success, I hope you will be able to help. I would like to do some simple, quick marinades that will make my barbecue a little more interesting. My guests will be expecting a meal to remember as I have been raving about your products for weeks! Mrs B Clarke
A.  BBQ's are certainly the accessory of the season for any good garden party. As yours is for a particular special occasion I would suggest you begin with marinating the night before so you can enjoy the day, and a few Pimms perhaps, with minimum of fuss. It will also help the flavour to develop more, and allow the meat to become even more tender.


Marinating should be done in a covered, non-metalic dish or sealed bag in the fridge overnight or for a minimum of 4 hours to impart all the lovely flavours from your chosen ingredients. You can marinade your products in any of your favourite flavourings but to get that "straight of the BBQ sticky, finger licking" result I have suggested a couple of marinades that work well with beef, lamb, pork and poultry.

Chinese marinade
1 tbsp Sesame Oil
1 tbsp Hoisin sauce
1 tbsp Chinese Five Spice seasoning
2 tbsp Rice Wine or Sherry

BBQ marinade
1 Garlic Clove (crushed)
1 tbsp Lemon juice
1 tbsp Olive Oil
1 tbsp Tomato Ketchup
1 tbsp Honey
1 tbsp Worcestershire Sauce
1 tbsp Tobasco

Honey-Chilli Marinade
2 tbsp Runny Honey
2 tbsp Light Soy Sauce
2 Red Chillies (finely chopped

Rosemary, Garlic and Pink Peppercorn Marinade
3 Garlic Cloves (crushed)
3 tbsp Olive Oil
2 Stalks Rosemary (needles only-roughly chopped)
1 tbsp Pink Peppercorns (crushed)

And for a really special treat, try griling our Luxury Whole Langoustines on your barbecue - you really can't beat the flavour.

To help nurture that passion for great food, our staff have the option to attend our regular in-house cook school, run by Stefan and his team.



They also have regular demonstrations by our skilled butchers, and the chance to taste our products, so each and every person knows about our products - where they come from, how to cook them, and most importantly, what they taste like. This knowledge allows them to give you the best service possible, and if we can't answer your question first time around, we'll find someone who can and get back to you.
