Head Chef's Tip:
Because fillet has looser fibres than other steaks, you may need to give these a little TLC and reshape them slightly before blooming. We recommend taking them out of their packaging by cutting along the length of the vacuum pouch, carefully turning out onto a plate, and patting them gently into shape. This will ensure that they retain their colour and cook evenly.

Remove the steak from its packaging, allow the meat to come to room temperature for 20 minutes, patting dry with kitchen paper.
Heat the oil in a large frying pan, over a high heat. Cook the steaks to your liking following the recommended times.

Rare: 4-5 minutes per side, rest for 6 minutes
Medium: 5½-6 minutes per side, rest for 4 minutes
Well Done: 7-7½ minutes per side, rest for 1 minute

Remove from the pan, cover with foil and leave to rest in a warm place for the recommended time.

They're a bit expensive, but the quality is fantastic. I will only buy them when they're on 'special offer' because of the normal price being 'excessive' in my opinion.

I've had these before and they are perfect. Just right for that special evening meal with a good glass of red!
Have had fillet steaks before and they were excellent.

We tried first two of this order of 8 fillet stakes and they were well marbled and on the toughest side but may have been overcooked by the chef (wife)
