Ingredients

Dried Apricot and Herbs
1 Sausage meat 450g
120g Dried Apricots (5mm diced)
4 stalks each Sage and Parsley (finely chopped)

Apple, Nuts & Bacon
150g Apple e.g. Bramley (peeled, cored and 5mm diced)
50 g whole Almonds or Walnuts (roughly chopped)
½ Onion (chopped)
60g smoked Bacon (cut into small dice)

Sage and Onion
1 Onion (chopped)
1 Garlic clove (crushed)
20 ml Vegetable oil
3-4 stalks Sage (finely chopped)
1 Sausage meat 450g

Instructions

Dried Apricot and Herbs
Mix all ingredients and return to baking tray and cook as per instructions.

Apple, Nuts and Bacon
Mix all ingredients and return to baking tray and cook as per instructions.

Sage and Onion
Heat a large pan and braise onions and garlic with oil for 4-5 minutes on a medium heat. Transfer into a bowl and allow to cool. Mix in the rest of ingredients and return to the baking tray and cook as per instructions.

Turkey wouldn't be complete without a traditional stuffing - Ours is based on our pork sausage meat and can be tailored to your tastes by adding some festive ingredients such as dried fruits, chestnuts or perhaps honey
