Cream Sauce with Horseradish

Warm horseradish sauce

Ingredients

0.5l beef stock, reduced by half
35g butter
35g flour
250ml cream
250ml milk
2tbsp hot horseradish sauce
A few drops lemon juice
1tsp chopped chives to garnish

Cream Sauce with Horseradish

Instructions

Melt butter in pot, add flour and stir until smooth and light golden in colour.

Gradually add stock, stirring to avoid lumps.

Add milk and simmer for 20 minutes, stirring continually.

Add cream, horseradish sauce and lemon juice and season to taste. Do not allow to boil again.

Scatter with chopped chives to serve.
