Honey Salmon Steak with Rocket Pesto
 
Serves 4 
 

4 Salmon Steaks
Salt and Pepper
1 tbsp Clear Honey
1 tbsp Mint (freshly chopped)
Juice of 1 lime
1 large handful Rocket Leaves
A little Olive Oil
50g/2oz Parmesan Cheese (grated)
1 tbsp Pine Kernels
3 Garlic Cloves

In a shallow dish, combine the seasoning, honey, mint and the juice of half a lime, add the salmon and marinade for 10 to 15 minutes.

Pre-heat the grill to high and lift the salmon from the marinade and grill for approximately 5 to 8 minutes depending on the thickness of the steaks. Brush the salmon occasionally with the marinade whilst under the grill.

To make the pesto, put all the remaining ingredients into a food processor and blend into a paste.
