Centre Cut Fillet Log Classic Roast
 
 Serves 4-6
 

1 Centre Cut Fillet Log 800g
1 tbsp Olive Oil
Salt and Pepper

 

 

 


Preheat oven to 190°C/375°F/Gas 5. Brush the fillet lightly all over with olive oil.
Sear the fillet on all sides in a hot frying pan to brown all over and season with salt and pepper.

Transfer to a rack in a roasting tin, uncovered and place in the oven, cook for 15 - 18 minutes for Rare, 20 - 25 minutes for Medium.

Take the fillet out the oven and rest on a rack, covered with foil in a warm place for 10 minutes.
Remove to a carving board and carve into slices.


Serve with: potato and celeriac rosti, and a wild mushroom medley.
