Some of the best Salmon in the world comes from Scotland, and we source ours from the west of the Shetland Isles. Specially selected from sea farms with plenty of room for the Salmon to swim in strong tides and currents, which results in firm meaty flesh with a delicate fresh flavour. Both varieties are cut from the loin, the very best of the fish, so no brown meat, skin or bones remain, and they are smoked over Oakwood chips taken from old malt whisky barrels.

Our Ultimate Smoked Salmon is filleted by hand before curing overnight on a dry bed of fine salt and brown sugar, and each slice is then interleaved and presented on a gold board.

Our Ultimate Gravadlax is cured with fine salt, Demerara sugar and crushed peppercorns, and each slice has a delicate layer of dill to further enhance the subtle flavour. This simply is the best you have ever tasted.
