Beetroot and Apple Salad

Ingredients

2-3 beetroot
1 ½ tsp caraway seeds
1 apple
50ml white wine vinegar
1tbsp sugar
2 pinches of salt

Beetroot and Apple Salad

Instructions

Wash the beetroot and remove leaves and stringy roots, without piercing the skin.

Simmer with ½ tsp caraway seeds and a pinch of salt for 45-50 minutes, until cooked.

Peel cooked beetroot and dice finely.

Peel apple and dice finely.

Mix the remaining 1tsp caraway seeds with a drop of water and chop, then mix with beetroot and apple.

Mix vinegar, sugar and a pinch of salt and heat gently until the sugar is dissolved. Allow to cool.

Mix everything together, season to taste and cover for 30 minutes before serving.
