Smokies were traditionally hot smoked in old oak whisky barrels in and around the fishing town of Arbroath. They gathered renown throughout Scotland and further afield in the 19th century, and have been enjoyed ever since, warm out of the barrel with the smoky juices dripping down one’s chin! Today, this intensely smoky speciality is still smoked only 50 miles away along the Aberdeenshire coast from us here at Donald Russell.

Suitable cooking methods:
Since these are hot smoked and so are already cooked, in Arbroath they are traditionally eaten hot off the barrel as soon as they’ve finished smoking!

The next best way to eat them is to let them defrost in the fridge overnight, take them out of their packaging and open up the pair of fillets. Gently peel away the whole skeleton to remove the bones and dot the fillets with a little butter.
Reheat gently and tentatively to be sure you don’t overcook them. For best results, heat for approximately 3 minutes under a medium grill. Alternatively, the smokies can be microwaved with care – we suggest testing them after 1 minute, based on a 800W microwave oven.
